Push the vegetables to the side, crack in the eggs and scramble. Add the chilled rice and the remaining 2 tablespoons of butter.
Pour the soy sauce over the rice and stir-fry on high heat, pressing the rice against the pan to get a slight crisp. Finish with a crack of black pepper.
