Wash and halve the baby potatoes. Pat the cubed sirloin steak dry with paper towels and season generously with salt and pepper.
Heat 1 tbsp olive oil in a large cast-iron skillet over medium-high heat. Add the potatoes, cut-side down, and cook until golden and tender, about 12-15 minutes. Remove potatoes and set aside.
Cover the pan for the first 5 minutes to help the potatoes soften faster.
Wipe the skillet and add the remaining 1 tbsp olive oil. Increase heat to high and sear the steak bites in a single layer for 3-4 minutes until a deep crust forms.
Don't crowd the pan or the steak will steam instead of searing.
Reduce heat to medium. Add the butter, minced garlic, and thyme sprigs to the skillet. Toss the steak bites to coat in the melting garlic butter.
Return the potatoes to the skillet and toss everything together for 1 minute to marry the flavors. Garnish with fresh parsley and serve immediately.
