Place the fresh pomegranate seeds and mint leaves in a large pitcher or sturdy glass.
Save a few mint sprigs for a pretty garnish at the end!
Add the fresh lime juice and honey to the pitcher. Use a muddler or the back of a wooden spoon to gently crush the seeds and mint, releasing all those vibrant juices and aromatic oils.
Don't over-muddle the mint or it can become bitter—just a few gentle presses will do.
Pour in the sparkling water and stir gently to combine the honey and juices.
Stir slowly to keep as many bubbles as possible!
Fill two tall glasses with ice and pour the mixture over the top, ensuring some pomegranate seeds make it into each glass. Garnish with extra mint and a lime wheel.
This is my absolute favorite way to stay cool while keeping things wholesome. If you don't have fresh pomegranate, a splash of 100% pomegranate juice works too, but the seeds add such a fun texture! For a little extra zing, try rimming the glass with a mix of sea salt and dried lime zest. Vibrant food, vibrant life!
