Dice the red onion and bell pepper, and mince the garlic. Measure out your spices so they are ready to bloom in the pan.
Using a sharp knife makes dicing the pepper much easier and safer!
In a medium cast iron skillet, heat the olive oil over medium heat. Add the onion and bell pepper, sautéing until they begin to soften.
Wait for the oil to shimmer before adding the veggies for a better sear.
Stir in the minced garlic, cumin, and smoked paprika. Cook for about 1 minute until the spices are fragrant.
Don't let the garlic brown or it will turn bitter.
Pour in the crushed tomatoes and add the spinach. Simmer for a few minutes until the sauce thickens slightly and the spinach wilts.
If the sauce looks too thick, add a splash of water.
Use a spoon to create four small wells in the sauce. Carefully crack an egg into each well. Cover the skillet with a lid.
Crack the eggs into a small bowl first to ensure no shells get into your sauce.
Cook until the egg whites are set but the yolks are still runny. Remove from heat and sprinkle with crumbled feta and fresh parsley. Serve immediately.
The residual heat will keep cooking the eggs, so pull them off the stove just before they look 'perfect'.
This is a staple in my house because it's so forgiving. If you don't have fresh spinach, kale works beautifully. For the best texture, make sure to use a high-quality olive oil for that signature Mediterranean silkiness. If you like a bit of heat, a pinch of red pepper flakes in the tomato base is a game changer!
