Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
Thoroughly pat the rinsed chickpeas dry using a clean kitchen towel or paper towels. Remove any loose skins that fall off.

In a medium bowl, whisk together the olive oil, dried oregano, garlic powder, onion powder, lemon zest, salt, and pepper.
Add the dried chickpeas to the bowl and toss until every chickpea is evenly coated in the oil and spice mixture.
Spread the chickpeas in a single layer on the prepared baking sheet. Roast for 25-30 minutes, shaking the pan halfway through, until golden brown and crunchy.
Listen for a 'clinking' sound when you shake the pan—that means they are getting crisp!
Remove from the oven and let them cool completely on the pan. They will continue to crisp up as they cool.
These are a fantastic alternative to greasy potato chips. The key is to pat the chickpeas completely dry before roasting to ensure maximum crunch! If you have any leftovers (unlikely!), they stay crunchy for about two days in an airtight container at room temperature.
