Rinse the chickpeas thoroughly and pat them very dry with a clean kitchen towel or paper towels. Remove any loose skins that pop off.

In a medium bowl, toss the dried chickpeas with olive oil until every bean is lightly coated.
Place the chickpeas in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 12-15 minutes, shaking the basket halfway through.
Listen for a 'clinking' sound when you shake the basket—that means they're getting crispy!
While the chickpeas are hot, transfer them back to the bowl and toss with the oregano, garlic powder, onion powder, sea salt, and fresh lemon zest.
Adding the spices after cooking prevents them from burning in the air fryer.
Let the chickpeas cool for at least 5 minutes before serving to allow them to fully crisp up.
The trick to perfect air-fryer chickpeas is making sure they are bone-dry before you toss them in oil. If you have time, let them air-dry on a clean kitchen towel for 30 minutes! These are best eaten the day they're made, but they'll stay crunchy in a glass jar for about 24 hours. Great for lunchboxes or as a salad topper too!
