Grate the zucchini using a box grater. Place the shreds in a clean kitchen towel and squeeze forcefully to remove as much water as possible. This is the secret to a crispy fritter!
Don't be shy—squeeze until no more liquid comes out!
In a large mixing bowl, combine the squeezed zucchini, crumbled feta, sliced green onions, dill, parsley, and minced garlic. Stir until well mixed.
Use a large wooden spoon to keep the herbs from bruising.
Add the beaten eggs to the zucchini mixture and stir to combine. Sprinkle the flour and baking powder over the top and fold gently until just incorporated.
Do not overmix, or the fritters might become dense.
Heat 3 tablespoons of olive oil in a large cast iron skillet over medium heat until shimmering.
Using a cast iron skillet ensures a perfectly even, golden crust.
Drop heaping tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon. Cook for 3-4 minutes per side until deeply golden brown and crispy.
Work in batches to avoid crowding the pan, which can cause steaming instead of frying.
Transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve immediately with fresh lemon wedges.

This is my Mediterranean take on a classic appetizer! The zucchini stays tender while the outside gets a beautiful golden crust. For the best crunch, make sure to squeeze as much liquid as possible out of the grated zucchini before mixing. If you don't have a wooden salad bowl for mixing, any large bowl will do, but there's something about the wood that feels so wholesome! Serve these with a big squeeze of lemon or a dollop of Greek yogurt.
