Crispy, refreshing cucumber slices topped with a protein-packed Greek yogurt and feta whip. The perfect light bite for busy afternoons!
Slice the cucumbers into 1/2 inch thick rounds and lay them out on a paper towel. Tap them dry to ensure the topping stays put.
Using an English cucumber means thinner skin and fewer seeds!
In a small mixing bowl, combine the Greek yogurt, crumbled feta, lemon juice, minced dill, and garlic powder. Stir vigorously until the mixture is creamy but still has little salty bursts of feta.
If you like it spicy, add a pinch of red pepper flakes here!
Spoon about one tablespoon of the yogurt mixture onto each cucumber round. Use the back of the spoon to create a little swirl.
Finish each bite with a few pomegranate seeds for a sweet crunch and a tiny drizzle of high-quality olive oil. Serve immediately!
To get that perfect texture, make sure your cucumber slices are patted very dry before adding the yogurt. If you’re prepping these for a lunchbox, keep the 'dip' and 'chips' separate until you're ready to snack! Healthy made easy!
