Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a food processor, pulse the chickpeas until they are broken down but still have some texture (don't turn them into hummus!).
If you don't have a processor, a potato masher works great too!
Transfer the chickpeas to a bowl and stir in the crumbled feta, egg, oat flour, dill, lemon zest, garlic powder, and salt until well combined.
Scoop about a tablespoon of the mixture at a time and roll into small balls, then slightly flatten them into discs.
Brush the tops of the bites with olive oil to help them get that beautiful golden crunch.
Bake for 15-18 minutes, flipping halfway through, until they are golden brown and firm to the touch.
Let them cool for 5 minutes before serving so the cheese sets.
These are a lifesaver for school lunches or that 3 PM energy slump! If you don't have fresh dill, a teaspoon of dried will work, but fresh really makes the flavors pop. Store them in an airtight container in the fridge for up to 5 days. For an extra kick, add a pinch of red pepper flakes to the dough!
