A bright, fiber-packed jarred salad featuring protein-rich chickpeas, crunchy cucumbers, and a zesty lemon-tahini dressing. Perfect for busy school runs and office lunches!
In a small bowl, whisk together the tahini, lemon juice, olive oil, maple syrup, and garlic powder until smooth. If it's too thick, add a teaspoon of water.
Use a high-quality olive oil for the best flavor!
Divide the dressing equally between two large glass jars.
Layer the ingredients into the jars in this order: chickpeas, red onion, cucumbers, cherry tomatoes, and finally the baby spinach.
Packing the greens last keeps them from getting soggy!
Seal the jars tightly and store in the refrigerator until ready to eat.
When you're ready for lunch, either shake the jar vigorously to coat everything in dressing or pour it out into a large wooden salad bowl. Give it a quick toss and enjoy!
This is my favorite lunchbox hack! To keep the salad crisp, I like to put the dressing at the very bottom of the jar, followed by the chickpeas, then the veggies, and finally the greens on top. It stays fresh for up to 3 days in the fridge! Healthy made easy, right?
