
A refreshing, antioxidant-packed spritzer that blends tangy lemon with sweet blueberries and cooling mint. Perfect for a wholesome afternoon pick-me-up!
In a small bowl, whisk together the fresh lemon juice and honey until the honey is completely dissolved.
If your honey is too thick, warm it for 5 seconds in the microwave first.
Place the fresh blueberries and 4 mint leaves into the bottom of a tall glass. Use a spoon or muddler to gently press them to release their juices.
Don't over-mash; you just want them to pop!
Fill the glass with ice cubes, then pour the lemon-honey mixture over the top.
Top the glass with chilled sparkling water and give it a very gentle stir to combine the vibrant layers.
Garnish with the remaining mint leaves and a few whole blueberries for a beautiful, fresh finish.
This is my favorite way to use up extra mint from the garden! For a more intense flavor, you can muddle the blueberries and mint together before adding the liquids. If you don't have honey, agave or maple syrup work beautifully as well. To keep it low-sodium and heart-healthy, stick to plain sparkling water rather than club soda.
