
A zesty, no-bake snack ball packed with crunchy pistachios, sweet apricots, and a hint of warm cinnamon. Perfect for a quick energy boost that the whole family will love!
Place the pistachios in a food processor and pulse until they are coarsely chopped. Set aside 2 tablespoons of the chopped nuts for coating later.
Don't turn them into dust; you want some crunch!
Add the dried apricots, shredded coconut, honey, lemon zest, cinnamon, and a pinch of sea salt to the food processor with the remaining pistachios.
If your apricots are very dry, soak them in warm water for 5 minutes first.
Pulse the mixture until it starts to clump together and forms a sticky dough.
Scoop out about a tablespoon of the mixture at a time and roll it between your palms to form small balls.
Dampen your hands slightly if the mixture sticks to your skin.
Roll each ball in the reserved chopped pistachios to coat the outside.
Place the balls on a tray and refrigerate for at least 30 minutes to firm up before serving.
This makes them much easier to handle and improves the texture.
These are a lifesaver for school lunches or a quick afternoon pick-me-up. The secret is to not over-process the mixture so you keep some of those lovely textures. If you don't have dried apricots, dried figs or dates work beautifully too! Store them in the fridge for up to a week.
