A moist, nutty Greek cake drenched in sweet cinnamon syrup – wholesome indulgence that's perfect for sharing with family after dinner. Packed with walnuts for that heart-healthy crunch! 🌰🍯
Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
Line with parchment for easy removal.
In a large bowl, combine chopped walnuts, semolina, flour, baking powder, ground cinnamon, and cloves. Mix well.
Freshly ground spices elevate the flavor.
In another bowl, beat eggs with sugar until pale and fluffy, then whisk in olive oil and milk.
Fold wet ingredients into dry until just combined. Pour batter into prepared dish.
Bake for 40 minutes or until golden and toothpick comes out clean.
Don't overbake – it should be moist.
While cake bakes, prepare syrup: In a saucepan, combine water, sugar, honey, cinnamon stick, and lemon juice. Bring to boil, then simmer 10 minutes until thickened.
Strain if you prefer no cinnamon bits.
Poke holes all over hot cake with toothpick. Slowly pour hot syrup evenly over cake.
Let cool completely in dish, then chill for at least 2 hours before slicing.
This cake gets better the next day as the syrup soaks in. Use fresh walnuts for the best flavor – toast them lightly if you like extra aroma!
