Place the dark chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until completely smooth and melted. Let it sit for 2-3 minutes to cool slightly.
In a medium mixing bowl, whisk together the Greek yogurt and honey until smooth and well combined.
Gently fold the melted chocolate into the yogurt mixture using a spatula. Mix until the color is uniform and the texture is light and airy. Add a tiny pinch of sea salt to enhance the chocolate flavor.
Don't overmix or you'll lose the fluffiness!
Spoon the mousse into individual serving bowls or ramekins.
Place the bowls in the refrigerator to set. This helps the texture become firm and mousse-like.
Top with fresh berries or a dollop of extra yogurt before serving.
This is a simplified, non-spiced version of my original mousse. For the best texture, use full-fat Greek yogurt and make sure your chocolate has cooled slightly before folding it in, otherwise, it might seize. If you want a little extra flavor without the heat, a tiny splash of vanilla extract works wonders!
