
A masterclass in low-and-slow brisket. This recipe focuses on internal temperatures to ensure a perfect, melt-in-your-mouth result every single time, regardless of the brisket's size.
Mix the salt, pepper, garlic powder, oregano, and paprika in a bowl. Season the brisket generously on all sides, pressing the rub into the meat. Let it sit at room temperature while you prep the smoker.
Apply the rub at least an hour before cooking if you have time!
Preheat your smoker or oven to 225°F (107°C). Place a water pan inside to maintain humidity.
Place the brisket in the smoker, fat side up. Insert a meat thermometer probe into the thickest part of the flat. Cook until the internal temperature reaches 165°F (74°C). This stage can take anywhere from 4 to 8 hours depending on size.
Spritz with the apple cider vinegar mixture every hour after the first 3 hours.
Once the brisket hits 165°F and has a beautiful dark 'bark', wrap it tightly in peach butcher paper or heavy-duty foil. This helps get past 'the stall'.
Return the wrapped brisket to the smoker. Continue cooking until the internal temperature reaches 203°F (95°C). The thermometer should slide in like butter. This usually takes another 4 to 6 hours.
Start checking the feel of the meat at 195°F.
Remove the brisket from the heat. Keep it wrapped and let it rest in an empty cooler or a room-temperature oven for at least 2 hours. This allows the juices to redistribute.
Do NOT skip the rest! It is the difference between dry and juicy meat.
Unwrap and slice against the grain into 1/4 inch thick slices. Serve immediately.
The golden rule of brisket: Cook to temperature, not to time! A 10-12 lb brisket usually takes 10-14 hours, but every piece of meat is different. Use a high-quality meat thermometer and don't rush the rest—it's the most important step for juicy results.
