A vibrant, one-pan breakfast featuring poached eggs in a savory tomato and red pepper sauce, elevated with salty feta and earthy kale.
Dice the onion and bell pepper, and mince the garlic. Remove the tough stems from the kale and roughly chop the leaves.
Small, uniform cubes of pepper and onion ensure they soften at the same rate.
Heat the olive oil in a large cast iron skillet over medium heat. Add the onion and bell pepper, sautéing until softened and slightly caramelized.
Don't rush the onions; that sweetness is the base of your sauce!
Stir in the garlic, cumin, and smoked paprika. Toast the spices for about a minute until fragrant.
Blooming the spices in oil unlocks way more flavor than just stirring them into the liquid.
Pour in the crushed tomatoes and stir to combine. Bring to a gentle simmer, then fold in the chopped kale until it begins to wilt into the sauce.
If the sauce looks too thick, add a splash of water to help the kale steam.
Use a large spoon to make four small wells in the sauce. Carefully crack an egg into each well. Cover the skillet with a lid.
Check at the 4-minute mark; you want the whites set but the yolks still wobbling.
Remove from heat. Sprinkle the crumbled feta and fresh parsley over the top. Serve immediately straight from the skillet.
Serve with some toasted whole grain bread or pita for dipping!
This is a staple in my house because it's so forgiving. If you don't have kale, spinach or chard work beautifully. The secret to a great shakshuka is not overcooking the eggs—you want those yolks to be liquid gold when you break them open with a piece of crusty bread. For an extra kick, add a pinch of red pepper flakes to the sauce.
