A vibrant, one-pan breakfast bake featuring juicy cherry tomatoes, fragrant basil, and a golden, savory custard-soaked bread base.
Preheat your oven to 375°F (190°C). Cube the sourdough bread into 1-inch pieces and halve the cherry tomatoes. torn the basil leaves into smaller pieces.
Using bread that's a day or two old helps it soak up the custard without getting too soggy.
In a medium bowl, whisk together the eggs, milk, minced garlic, salt, and black pepper until well combined.
Whisk vigorously to ensure the garlic is evenly distributed.
Heat the olive oil in a 10-inch oven-safe cast iron skillet over medium heat. Add the bread cubes and toast for 2-3 minutes until slightly golden.
Toasting the bread first adds a lovely depth of flavor and better texture.
Remove the skillet from heat. Scatter the cherry tomatoes and half of the basil over the bread. Pour the egg mixture evenly over everything.
Push the bread down slightly with a spatula to make sure every piece is touching the egg mixture.
Sprinkle the parmesan cheese over the top. Transfer the skillet to the oven and bake until the eggs are set and the top is golden brown.
The bake should have a slight jiggle in the center when it's done.
Remove from the oven, garnish with the remaining fresh basil, and let it rest for a few minutes before serving.
Letting it rest helps the custard finish setting for cleaner slices.
This is a fantastic way to use up slightly stale whole grain bread. The savory custard soaks in perfectly, and the tomato-basil combo is a Mediterranean classic. If you want a bit more protein, feel free to add a handful of cooked chickpeas to the skillet before baking!
