Place the dried apricots in a bowl of warm water and let them soak to soften.
If your apricots are already very soft, you can skip this step!
Drain the apricots well and pat them dry with a paper towel.
Add the apricots, almond butter, honey, and cinnamon into a food processor and pulse until a thick paste forms.
Don't over-process; you want a little texture left.
Transfer the mixture to a bowl and fold in the oats and chopped pistachios until evenly combined.
Scoop about a tablespoon of the mixture at a time and roll into small balls using your hands.
Roll each ball in the shredded coconut until lightly coated.
Place the bites on a tray and refrigerate to firm up before serving.
These are a total lifesaver for school lunches or that 3 PM slump. If you don't have almond butter, tahini works beautifully for an even more traditional Mediterranean flair. Keep them in the fridge for a firmer bite!
