Place the chilled watermelon cubes into a high-speed blender and pulse until completely smooth. Use a fine-mesh strainer to pour the juice into a pitcher if you prefer a thinner consistency, though I love the fiber!
Make sure the watermelon is very cold before starting for the best flavor.
In the bottom of a large pitcher or individual glasses, lightly muddle the fresh mint leaves with the lime juice to release the aromatic oils.
Don't over-muddle! You want the scent, not bitter green bits.
Pour the blended watermelon juice over the mint and lime mixture. Stir gently to combine the vibrant flavors.
Give it a quick taste here—if your watermelon wasn't very sweet, add a teaspoon of honey.

Wait to add the sparkling water until right before serving so it stays bubbly!
