A vibrant, one-pan dinner featuring juicy chicken thighs, bursting cherry tomatoes, and salty olives, all finished with a generous crumble of feta.
Preheat your oven to 425°F (220°C). Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, and dried oregano.
Drying the chicken helps it get that beautiful golden sear instead of steaming.
In a large oven-safe skillet (cast iron is my favorite!), heat the olive oil over medium-high heat. Add the chicken thighs skin-side down (or the smooth side if skinless) and sear until golden brown.
Don't crowd the pan; work in batches if you need to!
Flip the chicken and scatter the cherry tomatoes, olives, smashed garlic cloves, and lemon slices into the gaps around the meat.
Let the garlic nestle into the oil so it infuses the whole dish.
Transfer the entire skillet to the preheated oven. Bake until the chicken is cooked through and the tomatoes have started to burst and release their juices.
The tomatoes will create a built-in sauce—no extra work required!
Remove from the oven, sprinkle generously with crumbled feta and fresh parsley, and let it rest for a few minutes before serving directly from the pan.
The residual heat will soften the feta just enough to make it creamy.
This is my ultimate 'I have no time but want to eat like a queen' meal. The secret is the high heat—it blisters the tomatoes into a natural sauce that coats the chicken beautifully. If you're feeling fancy, serve it with a side of warm pita or some crusty bread to soak up all those gorgeous juices!
