Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.
In a small bowl, mix together the chopped spinach, crumbled feta, minced garlic, lemon zest, and a splash of olive oil until well combined.
Place the salmon fillets on the sheet pan. Divide the feta-spinach mixture evenly among the fillets, pressing it firmly onto the top of each piece of fish.
Arrange the asparagus and olives around the salmon. Drizzle the veggies with the remaining olive oil and sprinkle the oregano and black pepper over everything. Top the asparagus with the lemon slices.
Slide the pan into the oven and roast until the salmon flakes easily with a fork and the asparagus is tender-crisp.
Thicker fillets might need an extra 2-3 minutes, so keep an eye on them!
Remove from the oven and let the salmon rest for a minute before serving directly from the pan. Squirt the roasted lemon slices over the fish for a zesty finish.
