Finely dice the red onion, cucumber, and halve the cherry tomatoes. Chop the fresh parsley.
Keep the veggies small so you get a bit of everything in every spoonful!
Bring a small pot of water to a boil. Carefully lower the eggs into the water and boil for exactly 6 and a half minutes for a jammy yolk.
Immediately transfer eggs to an ice bath after the timer goes off to stop the cooking.
While the eggs cook, heat olive oil in a skillet over medium heat. Add the chickpeas and dried oregano, tossing for about 4 minutes until warmed through and slightly fragrant.
Don't over-crisp them; we just want them warm and infused with the herb oil.
Place the warm chickpeas in a bowl and toss with the lemon juice. Top with the diced cucumber, tomatoes, red onion, and crumbled feta.
Peel the eggs, slice them in half, and nestle them on top of the chickpea mixture. Garnish with plenty of fresh parsley and an extra drizzle of olive oil.
A crack of fresh black pepper right at the end makes the feta pop!
