Preheat your oven to 400°F (200°C). While the oven warms up, pat the chicken thighs dry with a paper towel and season them generously with salt, pepper, and half of the dried oregano.
Drying the chicken helps it get a better sear in the pan later!
In a large bowl, toss the sliced bell peppers and red onion wedges with 1 tablespoon of olive oil, the remaining oregano, and the minced garlic.
Heat the remaining 1 tablespoon of olive oil in a large oven-safe cast iron skillet over medium-high heat. Brown the chicken thighs for about 3-4 minutes per side until golden. Remove chicken and set aside briefly.
Don't worry about cooking them through yet; the oven will do the heavy lifting.
Add the seasoned vegetables to the same skillet, stirring to coat them in the pan drippings. Place the chicken thighs back on top of the vegetables.
Transfer the skillet to the oven and roast for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender and slightly charred.
Remove from the oven, drizzle with fresh lemon juice, and sprinkle the crumbled feta and fresh parsley over the top before serving.
This is a one-pan wonder that saves on dishes and delivers on flavor! If you want a bit more heat, feel free to add a pinch of red pepper flakes to the veggie mix.
