Heat the olive oil in a medium cast iron skillet over medium heat. Add the sliced red onion and sauté until softened and slightly translucent.
Don't rush the onions; letting them soften slowly brings out their natural sweetness.
Stir in the minced garlic and red pepper flakes, cooking for just about 30 seconds until fragrant. Toss in the chopped kale and a splash of water, covering the skillet for 2 minutes to let the greens wilt.
The steam from the water helps soften the kale quickly without burning the garlic.
Remove the lid and stir the kale. Use a spoon to create four small wells in the greens. Carefully crack one egg into each well.
Crack the eggs into a small bowl first to avoid getting shells in the skillet.
Cover the skillet again and cook until the egg whites are set but the yolks are still runny. Sprinkle the crumbled feta cheese over the top during the last minute of cooking.
Watch the eggs closely; they can go from runny to hard-boiled very fast!
Remove from heat. Drizzle with fresh lemon juice and a final crack of black pepper before serving directly from the skillet.
