Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Parchment paper makes cleanup a breeze and keeps the honey from sticking!
In a small bowl, whisk together the honey, olive oil, and cinnamon until well combined.
If your honey is too thick, microwave it for 10 seconds to make it pourable.
Place the peach halves cut-side up on the prepared baking sheet. Brush the honey mixture generously over the tops of the peaches.
Make sure to get the mixture into the little hollow where the pit was!
Roast the peaches in the center of the oven until they are tender and the edges are starting to turn golden brown.
Check them at 15 minutes; every oven is a bit different!
While the peaches roast, stir the lemon zest into the Greek yogurt. Set aside in the fridge to stay chilled.
The contrast between the hot peaches and cold yogurt is the best part.
Remove the peaches from the oven and let them cool for just 5 minutes. Plate them up with a big dollop of the lemon yogurt, a sprinkle of crushed pistachios, and a few torn mint leaves.
Drizzle any leftover pan juices over the yogurt for extra flavor!
For the best texture, use a high-quality Greek honey—the floral notes really make the peaches pop! If you're feeling adventurous, a tiny pinch of sea salt on top before serving balances the sweetness beautifully.
