Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Lay one sheet of phyllo dough on a clean surface and lightly brush with olive oil. Fold it in half lengthwise, then brush again.
Keep the remaining phyllo covered with a damp cloth so it doesn't dry out!
Place a block of feta at the bottom of the phyllo strip. Fold the sides in and roll it up tightly like a small burrito. Repeat with the remaining cheese and dough.
