
Creamy, tangy yogurt 'cheese' balls rolled in vibrant herbs and stored in silky olive oil. The ultimate grab-and-go Mediterranean protein snack!
In a medium bowl, mix the Greek yogurt with the salt until well combined.
Line a colander with three layers of cheesecloth and place it over a deep bowl. Spoon the yogurt into the center and tie the cloth tightly with string.
Place the colander and bowl in the fridge to drain for at least 24 hours. The yogurt will release liquid (whey) and become firm.
Remove the thickened yogurt from the cloth. Lightly grease your hands with olive oil and roll the labneh into small balls, about the size of a walnut.
In a small bowl, mix the dried oregano, thyme, red pepper flakes, and lemon zest. Roll each ball in the herb mixture until coated.
Place the balls into a clean glass jar and pour the olive oil over them until they are completely submerged. Let them marinate for at least an hour before snacking.
The trick to perfect labneh balls is letting the yogurt strain long enough so they're easy to roll. If you're in a rush, 12 hours works, but 24 hours is the gold standard for that 'cheeselike' texture! Keep them submerged in oil and they'll stay fresh for weeks.
