Pat the halloumi slices dry with a paper towel to ensure a good sear. Finely mince the parsley and garlic.
In a small bowl, mix together the minced parsley, garlic, lemon zest, and lemon juice to create your fresh gremolata. Set aside.
Heat the olive oil in a cast iron skillet or non-stick pan over medium-high heat.
Add the halloumi slices to the hot pan. Sear for 2-3 minutes on each side until they develop a beautiful golden-brown crust.
Don't crowd the pan; work in batches if necessary!
Transfer the golden halloumi to a serving platter. Immediately spoon the fresh gremolata over the warm cheese and finish with a light drizzle of honey. Serve warm.
These are best served immediately while the halloumi is warm and squeaky! If you can't find halloumi, a thick slice of grilling cheese works too. For an extra kick, add a tiny pinch of chili flakes to the honey drizzle. Healthy made easy, and so vibrant!
