In a large wooden salad bowl, whisk together the olive oil, dried oregano, sea salt, and garlic powder until well combined.
Using a large bowl gives you plenty of room to toss the chips without breaking them.
Add the pita triangles to the bowl and toss gently with your hands or a large spoon until every piece is evenly coated in the herb oil.
Don't be afraid to get your hands a little oily here; it ensures the best flavor coverage!
Spread the pita triangles in a single layer on the prepared baking sheets, making sure they don't overlap.
If they overlap, they'll steam instead of crisping up. Give them space!

Watch them closely in the last 2 minutes as they can go from golden to burnt very quickly!
