In a small bowl, whisk together the olive oil, lemon juice, honey, minced garlic, and a pinch of black pepper to create the dressing. Set aside.
Add a pinch of red pepper flakes if you like a little heat!
In a large bowl, toss the chickpeas, cucumber, cherry tomatoes, red onion, parsley, and mint together. Pour half of the dressing over the salad and toss to coat.
Heat a non-stick skillet over medium-high heat. Place the halloumi slices in the dry pan (no oil needed!) and sear for 2-3 minutes per side until golden brown and slightly softened.
Don't crowd the pan, or the cheese won't get that beautiful crust.
Divide the chickpea salad into bowls, top with the warm halloumi slices, and drizzle with the remaining dressing. Serve immediately.
If you can't find halloumi, firm feta works too, but it won't get that same 'squeaky' golden crust. Don't skip the lemon zest—it's the secret to making the flavors pop!
