Zesty, garlic-infused shrimp skewers paired with a cool, creamy feta dipping sauce. The perfect vibrant appetizer for any gathering.
In a medium bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, and red pepper flakes. Add the shrimp and toss to coat thoroughly. Let marinate in the fridge.
While the shrimp marinates, make the whipped feta dip. Combine the crumbled feta, Greek yogurt, and chopped dill in a food processor or blender. Pulse until smooth and creamy. Transfer to a serving bowl.
Thread the marinated shrimp onto wooden or metal skewers, about 3-4 shrimp per skewer.
Preheat a grill pan or outdoor grill to medium-high heat. Lightly oil the grates.
Grill the skewers for 2-3 minutes per side, or until the shrimp are pink, opaque, and slightly charred.
Don't overcook them or they'll get rubbery!
Remove from heat and serve immediately alongside the whipped feta dip. Garnish with extra lemon wedges if desired.
Soaking the wooden skewers for at least 30 minutes prevents them from burning! For the best flavor, let the shrimp marinate for the full 30 minutes—it makes a world of difference. Healthy made easy!
