Preheat your oven broiler to high and line a small baking sheet with parchment paper.
Make sure the rack is about 6 inches away from the heat source.
Slice each pitted date lengthwise to create a pocket, being careful not to cut all the way through.
Medjool dates are best because they are soft and jammy!
Stuff each date with about a teaspoon of goat cheese and press one walnut half into the center.
Use a small spoon or a piping bag for a cleaner look.
Wrap each stuffed date tightly with a half-slice of prosciutto, securing it with a toothpick if needed. Place them on the prepared baking sheet.
Broil the dates for 2-3 minutes per side, or until the prosciutto is crispy and the cheese is starting to bubble.
Watch them closely! The sugar in the dates can burn quickly.
Remove from the oven and immediately drizzle with honey, then sprinkle with lemon zest and fresh thyme. Serve warm.
These are best served immediately while the dates are warm and the goat cheese is creamy. If you want to prep ahead, you can stuff the dates and wrap them in the prosciutto a few hours early, then just pop them under the broiler right before guests arrive! Feel free to swap the goat cheese for feta if you want an extra salty kick.
