Pat the salmon fillets completely dry with a paper towel and season both sides with salt and pepper. This is the secret to getting that restaurant-quality crispy skin!
Heat the olive oil in a large cast-iron skillet over medium-high heat. Once the oil is shimmering, place the salmon fillets skin-side down. Press down lightly with a spatula to ensure even contact.
Sear the salmon without moving it for about 4-5 minutes until the skin is golden and crispy. Flip carefully and cook for another 2 minutes for medium-rare, then remove the salmon from the pan and set aside on a plate.
The salmon will continue to cook slightly while resting, so don't overdo it in the pan!
Lower the heat to medium. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up all those delicious browned bits from the bottom of the pan.
Whisk in the butter one tablespoon at a time until the sauce thickens slightly and looks glossy. Stir in the capers, lemon zest, and half of the fresh dill.
Return the salmon fillets to the pan (skin-side up to keep it crispy!) and spoon the sauce over the meat. Garnish with the remaining dill and serve immediately.
