
A vibrant, one-pan dinner featuring crispy chicken thighs, protein-packed chickpeas, and earthy kale, all brought together with a zesty lemon-garlic drizzle.
Preheat your oven to 425°F (220°C). In a large cast-iron skillet or rimmed baking sheet, toss the chickpeas, red onion wedges, and smashed garlic with 1 tablespoon of olive oil and a pinch of salt.
Make sure the chickpeas are very dry before tossing so they get extra crispy!
Pat the chicken thighs dry with a paper towel. Rub them with 1 tablespoon of olive oil, oregano, smoked paprika, salt, and pepper. Nestled the chicken into the skillet among the chickpeas and onions.
Drying the skin is the secret to that golden crunch.
Place the lemon slices on top of the chicken and chickpeas. Slide the skillet into the oven and roast until the chicken is cooked through and the skin is crispy.
The chicken should reach an internal temperature of 165°F.
Remove the skillet from the oven. Scatter the torn kale over the hot chicken and chickpeas. Drizzle with the remaining tablespoon of olive oil and toss the kale slightly so it wilts from the residual heat.
The kale only needs a few minutes to soften and get those slightly crispy edges.
This is a family favorite because it's virtually impossible to mess up. The key is to let the chicken thighs get nice and crispy on top while the chickpeas soak up all those glorious juices at the bottom of the pan. If you have picky eaters, you can swap the kale for spinach at the very end—it wilts faster and has a milder flavor. Serve it with a dollop of Greek yogurt or some crusty bread to mop up the lemon-garlic oil!
