
A light and crispy Mediterranean-inspired dessert featuring layers of flaky phyllo, creamy Greek yogurt, and a zesty honey-orange drizzle.
Preheat your oven to 375°F (190°C). Lay one sheet of phyllo on a clean surface and lightly mist with olive oil. Stack 3 sheets total, misting between each. Repeat with the remaining 3 sheets to make two stacks.
Cut each stack into 4 equal squares. Place them on a parchment-lined baking sheet.
Bake the phyllo squares until they are golden brown and very crisp. Watch them closely as they can burn quickly!
They should look like golden crackers.
While the phyllo bakes, whisk the honey, orange juice, and cinnamon in a small bowl until smooth.
Remove phyllo from the oven and let cool for a few minutes. To assemble, place one square down, dollop with a generous spoonful of Greek yogurt, and top with a second square.
Drizzle the orange-honey syrup over the top, sprinkle with crushed pistachios and fresh orange zest, and serve immediately.
The key is to use a really high-quality honey since it's the star of the show. If you're feeling adventurous, a tiny pinch of sea salt on top of the orange zest really makes the flavors pop! Healthy made easy, right?
