
Golden, crispy phyllo parcels stuffed with melty kasseri cheese and finished with a drizzle of thyme-infused honey and toasted sesame seeds.
Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Layer a second sheet on top and brush again. Repeat until you have a stack of 4 sheets. Cut the stack in half lengthwise to create two long strips.
Keep the remaining phyllo covered with a damp cloth so it doesn't dry out and crack!
Place a block of kasseri cheese at the bottom of one strip. Fold the corner over the cheese to form a triangle, then continue folding like a flag until you reach the end. Repeat with the remaining dough and cheese.
Don't wrap them too tightly or the cheese might burst out during frying.
In a large cast iron skillet, heat 2 tablespoons of olive oil over medium heat. Fry the triangles for 2-3 minutes per side until they are deep golden brown and crispy.
Work in batches to avoid crowding the pan.
While the cheese is frying, warm the honey slightly in a small bowl and stir in the fresh thyme leaves.
Transfer the crispy parcels to a plate, drizzle generously with the thyme honey, and sprinkle with black sesame seeds before serving immediately.
These are best served warm so the cheese stays nice and gooey! If you can't find kasseri, a mild provolone or even a firm mozzarella works in a pinch. For a little extra kick, a tiny pinch of red pepper flakes in the honey is a game changer. Healthy made easy!
