
Crispy, golden-brown filo pastry triangles filled with a creamy, herbed feta and ricotta mixture, finished with a sweet honey drizzle.
Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
Make sure your filo is fully thawed but keep it covered with a damp cloth so it doesn't dry out while you work!
In a medium mixing bowl, combine the crumbled feta, ricotta cheese, beaten egg, and chopped fresh mint. Stir until well combined.
The ricotta adds a lovely creaminess that balances the salty punch of the feta.
Place one sheet of filo on a clean surface and brush lightly with melted butter. Layer another sheet on top and brush again. Cut the sheets lengthwise into 3 even strips.
Don't worry if the filo tears a little; the butter acts like glue!
Place a tablespoon of the cheese mixture at the bottom of a strip. Fold one corner over the filling to form a triangle, then continue folding like a flag until you reach the end of the strip. Repeat with all strips.
Keep the folds snug but not too tight or they might burst in the oven.
Place the triangles on the prepared baking sheet, seam-side down. Brush the tops with the remaining melted butter and sprinkle with sesame seeds.
Sesame seeds add a beautiful nuttiness and a professional look.
Bake for 12-15 minutes, or until the pastry is deep golden brown and shatteringly crisp.
Rotate the pan halfway through for even browning.
Remove from the oven and immediately drizzle with the honey while they are still piping hot. Serve warm.
The hot pastry will absorb just enough honey for a perfect sweet-salty balance.
These are best served immediately while the honey is still warm and the filo is at its peak crunch. If you want to prep ahead, you can assemble the triangles and keep them in the fridge for up to 4 hours before baking. For an extra Ethiopian-inspired twist, try adding a tiny pinch of ginger to the honey drizzle!
