In a medium bowl, mix the Greek yogurt with the salt until well combined.
Use full-fat yogurt for the creamiest results!
Line a fine-mesh sieve with three layers of cheesecloth and place it over a deep bowl. Pour the yogurt mixture into the center.
Make sure the sieve sits high enough so the yogurt doesn't touch the liquid that drains out.
Gather the edges of the cheesecloth and tie them together. Place the bowl in the refrigerator and let the yogurt strain for 24 to 48 hours.
24 hours gives you a soft spread; 48 hours gives you a firmer cheese.
Once strained, discard the liquid (whey) and transfer the thickened labneh to a shallow serving bowl. Use a spoon to create a few decorative swirls and wells on the surface.
You can store this in an airtight container for up to a week.
In a small jar, whisk together the olive oil, za'atar, and lemon juice. Drizzle the mixture generously over the labneh, filling the wells.
Warm the oil slightly if you want the spices to bloom more.
Scatter the fresh mint over the top and serve immediately with your favorite dippers.
