In a high-speed blender, combine the finely ground toasted flaxseeds and 1 cup of the water. Blend on high for 1 minute until a creamy base forms.
Grinding the flaxseeds fresh ensures the best nutrient absorption and a smoother texture.
Add the remaining 1 cup of water, honey, and ground cinnamon to the blender.
Add the ice cubes and blend again for 30-45 seconds until the drink is frothy and chilled.
If you prefer a thinner consistency, add an extra splash of water.
Pour into chilled glasses and garnish with an extra pinch of cinnamon if you're feeling fancy! Serve immediately while frothy.
This is my Mediterranean-inspired take on a traditional Ethiopian Flaxseed Shake (Telba). It's incredibly creamy without any dairy, and the nutty flaxseeds provide a wonderful dose of heart-healthy omega-3s. For the best flavor, lightly toast your flaxseeds in a dry pan for 2-3 minutes until they just start to pop before grinding!
