Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides. Preheat your oven to 375°F (190°C).
Dry skin is the secret to maximum crispiness!
Heat the olive oil in a large oven-proof skillet (preferably cast iron) over medium-high heat. Place chicken skin-side down and sear until golden and crisp, about 8-10 minutes. Flip and sear for another 2 minutes, then remove chicken from the pan and set aside.
Don't crowd the pan; work in batches if you need to.
In the same pan, add the shallots and garlic. Sauté in the chicken fat until they start to soften and turn golden brown.
The fat in the pan is liquid gold—don't drain it!
Pour in the white wine to deglaze the pan, scraping up all the brown bits from the bottom. Let it simmer until reduced by half.
That 'fond' on the bottom is where all the deep flavor lives.
Stir in the chicken broth, thyme sprigs, lemon juice, and heavy cream. Return the chicken thighs to the skillet, skin-side up (keep the skin above the liquid to stay crispy).
Transfer the skillet to the oven and bake until the chicken is cooked through (internal temp of 165°F).
Remove from the oven, discard the thyme sprigs, and stir in the lemon zest and fresh parsley. Spoon the creamy sauce and softened shallots over the chicken before serving.
This is my Mediterranean-inspired take on a classic French dish. The secret is in the slow-braised shallots and the hit of fresh lemon at the end to keep it vibrant. If you don't have a cast iron skillet, any heavy-bottomed pan will work, but cast iron gives those thighs the best crispy skin! Serving this with a side of crusty whole-wheat bread is mandatory for soaking up that glorious sauce. Healthy made easy, right?
