Drain the soaked dates and pat them dry. Place the dates and tahini into a food processor and pulse until a thick, smooth paste forms.
If the paste is too thick, add a teaspoon of the date soaking water to loosen it up.
Add the oats, chia seeds, cinnamon, vanilla, and sea salt to the processor. Pulse until the mixture comes together into a sticky dough that holds its shape when pinched.
Don't over-process; you still want a little texture from the oats!
Scoop about a tablespoon of the mixture at a time and roll it between your palms to form 1-inch balls.
If the dough is too sticky, chill it in the fridge for 15 minutes before rolling.
Place the sesame seeds in a small bowl. Roll each ball in the seeds until evenly coated, pressing slightly so they stick.
Place the finished bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving.
