In a large bowl, toss the cubed lamb with 2 tablespoons of berbere spice and a pinch of salt. Let it sit while you prep the veggies to soak up those bold flavors.
Wash and thinly slice the collard greens, onions, garlic, and ginger.
Heat the olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Once shimmering, add the lamb in batches, searing until browned and crispy on all sides. Remove lamb and set aside.
Don't crowd the pan or the meat will steam instead of searing!
In the same pan, add the sliced onions. Cook until softened and slightly caramelized, about 5 minutes. Stir in the garlic, ginger, and the remaining tablespoon of berbere spice.
Add the collard greens to the pan along with a splash of water. Cover and steam for 3-4 minutes until the greens are vibrant and tender.
Return the lamb to the pan, tossing everything together to combine. Drizzle with fresh lemon juice and serve immediately.
