A hearty one-pan breakfast that feeds the whole family. Italian sausage, fresh spinach, and melted mozzarella in every bite.
Preheat oven to 375°F (190°C).
Heat olive oil in an oven-safe skillet over medium-high heat. Brown the sausage, breaking it into crumbles, about 5 minutes.
Add garlic and spinach. Cook until spinach is wilted, about 2 minutes.
Whisk eggs, heavy cream, salt, and pepper together. Pour over the sausage mixture.
Top with mozzarella. Let cook on stovetop for 2 minutes until edges begin to set.
Transfer to the oven and bake 15-18 minutes until center is set.
The frittata will puff up and deflate slightly as it cools — that's normal.
Let cool 5 minutes, slice into wedges, and serve.
Use a cast iron skillet for the best crust on the bottom.
